Ricotta and spinach ravioli: the essence of Italian home cooking

Ingredients for 4 people
- 300 g of spinach
- 300 g of ricotta
- 2 eggs
- 200 g of flour
- 50 g of grated parmesan
- Sage
- Butter
- salt
- Pepper
Method
- Wash and cook the spinach, squeeze it and mix it with the ricotta, an egg and the grated parmesan. Season with salt and pepper.
- Prepare the egg pasta with flour and eggs and roll out the pastry. Cut discs and fill them with the spinach and ricotta mixture.
- Close the ravioli and cook them in boiling salted water for 5 minutes.
- In the meantime, prepare a dressing with melted butter and sage leaves. Pour over the cooked ravioli and serve hot.
