Ricotta and spinach ravioli: the essence of Italian home cooking

Ingredients for 4 people

  • 300 g of spinach
  • 300 g of ricotta
  • 2 eggs
  • 200 g of flour
  • 50 g of grated parmesan
  • Sage
  • Butter
  • salt
  • Pepper

Method

  1. Wash and cook the spinach, squeeze it and mix it with the ricotta, an egg and the grated parmesan. Season with salt and pepper.
  2. Prepare the egg pasta with flour and eggs and roll out the pastry. Cut discs and fill them with the spinach and ricotta mixture.
  3. Close the ravioli and cook them in boiling salted water for 5 minutes.
  4. In the meantime, prepare a dressing with melted butter and sage leaves. Pour over the cooked ravioli and serve hot.
